Authentic Palestenian Hummus

Recipe

Serving: 4-6 people

Difficulty: Easy

Dietary Restrictions: Vegan, vegetarian

Origin: Middle East ( Lebanon, Syria, Palestine, Jordan )


Ingredients:

  • 500g chickpeas soaked overnight, cooked over medium heat for 45-60 minutes and drained.

  • 250g of Tahini sauce

  • 10-15 crushed garlic cloves

  • 150ml extra-virgin olive oil

  • 10 cl Water

  • 2 and a 1/2 lemon

  • 2 branches of fresh thyme

  • 1 green chili

  • Salt to taste


Method:


There are three main steps:

STEP1- Make Tahini Sauce

Combine tahini with salt, 1 lemon juice, 5-6 crushed garlic cloves. Taste to adjust the way you like it. Add water slowly and mix until you get a fluffy texture. You can save this tahini sauce in the fridge and reuse it for your salad dressings and marinades later


STEP2- Make Confit Garlic Olive Oil


Over medium heat, put olive oil with 5 whole garlic gloves cut in half, thyme, and one green chili. Let it simmer for 20-25 minutes. Let it cool and put in a mason jar to reuse also in other dishes.


STEP3: Mix the hummus and plate it


In a food processor, mix chickpeas,1.5 lemon juice, garlic from step2, 3-4 tables spoons of Tahini sauce from Step1. Add a bit of salt and mix well until combined. You may want to add some cold water if you like the texture to be a bit airy and fluffy...


For garnish - I like to add some chopped parsley, chickpeas, and the olive oil that I used to confit the garlic ... optional >> you can add a small spoon of tahini sauce on top of the hummus


It’s very very easy and you will have a flavour bomb in your fridge that will last you a week !
