The most delicate "Flan Parisien"

Flan Parisien is a typical French savory desert loved by many, especially kids.

I started making it for parties and my friends love it.


In my recipe, I am not going to use the shortcrust pastry because I want a lighter flan. However, it is totally worth making if you are trying it for the first time.


I will include the shortcrust step in the recipe if you want to make it. You can also use a store bought one.


as always don't take my word for it - simply try it :)

I still have the flavor in my mouth ..so yummy..it reminds me of my childhood !



 

Recipe

Servings: 6 people

Difficulty Level: Easy

Preparation Time: 30 minutes

Cooking time: 50 minutes

  • 300g of shortcrust pastry ( I did not make this to make the flan lighter )

  • 1L of Milk

  • 1vanilla pod or 2 tsp of vanilla essence

  • 125g sugar

  • 4 whole eggs

  • 90g corn flour

  • 1tsp of butter for buttering the mould

  • 1 cake mold of 20 to 22 cm

  1. Butter your mold, place you shortcrust pastry into the mold and align to fit well into the edges of the mold. Place into the refrigerator for at least 20 minutes or longer.

  2. Pre-heat your oven at 180°C.

  3. Pour the link in a casserole, add you vanilla pod, leave it to boil then remove from the heat and let the vanilla pod infuse for 10 minutes off the heat while covered.

  4. Break your eggs into a bowl, add the sugar and mix well with your hand mixer.

  5. Add corn flour, then temper the mixture by adding 1/3 of the milk while stirring. Keep adding your milk while stirring gently. Don't forget to pass you milk mixture through a sieve and to remove the vanilla pod. before adding it in during this step.

  6. Put your casserole back on the hear, continue stirring until boiling. Right when the boiling starts, county one minute of cooking, stir well you mixture. Then, take it off the heat and let it cool aside.

  7. Mix the cream well, and layer it onto your cold pastry. let it set for 5 minutes, then place into the oven for 50 minutes under 170 °C for about 40 min.

  8. Let it cool before you remove your preparation from the mold.

  9. I like to place it in the fridg before serving.
