Tuna cakes
Tuna cakes are a perfect warm appetizer or even a snack/light dinner. It's perfect for kids to eat tuna.
The ingredients are simple and the result is to die for.

2 eggs
3 medium mashed potatoes
2 TSP coriander
One large Tuna can
5 TSP Grated Gouda cheese
2 TSP Goat Cheese
Salt and Pepper to taste
Cayenne pepper
/2 tsp of Harissa or Chili Pepper
I did not use flour in this recipe. It worked out perfectly and the texture was still crisp and soft.
Prepration:
Step1:
All you have to do is to boil the potatoes until soft, mash them Chop the coriander leaves Add all ingredients into a large mixing bowl and mix everything well with a spatula or your hands.
Step2:
Pre-heat a non-stick pan on medium heat. Add a 1 TSP of canola or pomace oil - you don't need a lot of oil as the aim is not to deep fry the cakes.
Use a measuring cup, your hands, or a cookie spoon to form a cookie and place it into the pan to cook for 10 minutes
